How to stop losing orders at rush hour

The problem is almost never a slow kitchen. It is an order that depends on someone remembering it.

Short answer

Orders go missing at peak time because the information travels through people: someone writes it, someone carries it, someone shouts it. Every handover is a place it can be dropped. The fix is to take memory out of the path — every order visible to the kitchen the instant it arrives, with the time it landed, changing state as it moves. When anyone can look at one screen and say what is outstanding, the rush stops being guesswork.

Why it happens

Paper has no state. It does not know whether it has been made, it does not flag when it is going stale, and it cannot be in two places at once. While volumes are low your team's memory papers over those gaps; at peak that memory saturates, and the gaps all show up at once. Adding people at that point adds handovers — and sometimes makes it worse.

    Counter, delivery, marketplace, digital menu: all of it has to land in the same queue. Two parallel queues is how orders get lost, because nobody can watch both at once precisely when it is busy.

    A screen in the kitchen showing open orders, oldest first. It does not depend on anyone carrying paper, it does not get wet, and it does not slide underneath something else.

    Track time, not just order

    At peak, what matters is which order has been waiting longest. Without a visible clock, the one at the back waits forever — and that is always the one that becomes a complaint.

    Close the loop with one tap

    Ready, out, delivered. If marking state is fiddly, nobody does it mid-rush and the screen becomes decoration. The button has to be big and the gesture single.

    What arrives on its own should print on its own

    A marketplace or digital-menu order should not sit waiting for someone to click print. At peak, that someone is serving another customer.

Do I need an expensive kitchen monitor?
